The biggest annoyance for me is no official Google Assistant yet, but the only real things you're missing out on is blood pressure and ECG, however there are workarounds on XDA Developers to get that working on any phones. And these are features that aren't available on other watches at the moment anyway so it's not really a good reason to avoid it.
Minor things like the watch using Samsung's own apps for calendar, phone, contacts and so on seems to upset many, however they all work fine when paired with a non Samsung phone so it's not even an issue really.
You have Google Maps, Keep, YouTube Music, Clock, Pay, Messages. Fit, and Camera apps in the Play Store (note: if you want to yse the google camera remote you must install the Wear OS app on your phone too, even though it doesn't actually work for anything as the watch is managed by the Galaxy Wearable app).
Overall, it seems to be one of the best watches for Android at the moment, but many people avoid because of "Samsung bloatware", which isn't really bloatware, it's Samsung's optimised apps, and Samsung Health seems far better than Google Fit anyway
